Do I need to replace my finished/edited config.php file with the original one? If “yes” then will the built-in installer going to give me the opportunity to change the pageroot, or will I be forever stuck with the /list installation URL?

No, keep your edited file, just make sure you change the $pageroot to match the actual path to your phplist installation.
