I have added the Reply-to-Header field in the config file but I’m wondering if there is a way to set the default value of this field as well. While it is easy enough for the person who regularly sends our newsletters, a new person might not remember to do so.

You can set a default 'From" address in the web settings… settings, campaign settings, Default for ‘From:’ in a campaign

Actually, wanting to set the Default REPLY TO address which is different than the from address.
